Watermelon and Feta Salad

This sweet and savory salad is so refreshing and unexpected.  It’s a great way to use that other half of your huge watermelon you may have bought over the weekend!  For a bigger salad, I like to compose the watermelon over greens like baby spinach.


         1 bag organic baby spinach

         2 and ½ cups watermelon, rind removed, and cut in 1-inch cubes

         1 cup feta cheese, crumbled

         ½ cup whole fresh mint leaves, julienned, optional.

         ½ cup red onion, sliced, optional.

     Place the baby spinach, watermelon, feta, and mint in a large bowl. Drizzle with enough vinaigrette to coat the greens lightly and toss well. Taste for seasonings and serve immediately.

     Add dressing based on your preference.  This can be your favorite recipe or a store-bought variety. 

-Balsamic reduction or dressing, if you like a heartier and slightly sweeter flavor.

-Dijon mustard vinaigrette, if you like a traditional flavor.

-Citrus vinaigrette, if you like a sweet and fruity taste (see below).

Citrus Vinaigrette

         1/4 cup freshly squeezed orange juice

         1/4 cup freshly squeezed lemon juice

         1/4 cup minced shallots

         1 tablespoon honey

         1/2 cup good olive oil

         1 teaspoon kosher salt

         1/2 teaspoon freshly ground black pepper

Whisk together the orange juice, lemon juice, shallots, honey, salt, and pepper. Slowly pour in the olive oil, whisking constantly, to form an emulsion.
