Vitamin D Salmon Burgers

I was on NBC/King 5 news today speaking to Amanda about my easy and tasty salmon burgers - great for the whole family and high in Vitamin D!

Easy Salmon Burgers

1 can unsalted wild pink salmon, drained.

2-3 T mayonnaise (light or regular)

2 tsps Dijon mustard

1 T lemon juice

¼ cup chopped scallions

¼ cup breadcrumbs

salt and pepper to taste (1/2 tsp each for my liking)

Form patties and fry in olive oil, 6-8 minutes on one side then flipping over for another 3-4 minutes turning heat down.

Serve with purple cabbage/green onion slaw and baked fries.  This is a crowd-pleaser!
