Apple Pie Oatmeal is Balanced and Satisfying

Perfectly Sweet Apple Pie Oatmeal

This is a nutritious and satisfying breakfast.  It is balanced with fiber, protein and just the right amount of maple syrup.   Cinnamon adds comforting flavorful and antioxidants. 


5 organic apples cut up in apple-pie pieces (soft is good)

2 cups organic apple juice

2 teaspoons cinnamon

4-5 T maple syrup (to taste)

1 tsp vanilla extract


3 cups oats

1.5 cups water


1.    Place the apples in a medium-sized pot, cover with apple juice and stir.  Add the cinnamon and stir some more.  Cook for 20-30 minutes over medium heat, stirring occasionally to prevent burning.  Add the maple syrup and vanilla.

2.    In a separate pot, cook the oats and water over medium-high heat for five minutes. 

3.    Place 1.5 cups of oatmeal in a bowl, pour 1/3 cup of the apple pie mixture and top with a dollop of full-fat plain yogurt.  Add 2 T of nuts and 1 teaspoon chia seeds (optional).
